  • Cornicabra is one of the most famous Spanish varieties. It is the second most common variety after Picual. It is native to the Toledo area but is also widespread in other areas. When processed and converted into oil, it is very fruity and aromatic with a slight hint of apple. It is considered one of the healthiest olive oil varieties in the world. Cornicabra oil, together with Picual olive oil, is one of the oils that contain the highest proportion of oleocanthal (anti-inflammatory and antioxidant properties). Cornicabra olives must be harvested late because they are very firm on the tree. Cornicabra is known for requiring more effort to harvest than other olive varieties.
  • Growth: weak, the crowns are dense, the shoots grow upright. At maturity, it can be either a tree or a shrub, depending on the method of pruning. It can adapt to different climates and soil types. It is well resistant to frost and drought.
  • It flowers: Cornicabra is self-pollinating, but with another variety nearby the crop will be heavier.
  • Fruits: medium-sized, elongated and asymmetrical with a pointed top. Weight 4 to 6 g. The colour of the fruit is burgundy red when fully ripe. Ripe olives contain more than 19 % oil. Cornicabra produces extra virgin oil with high stability and excellent organoleptic properties.
  • Maturation time: harvesting takes place in October
  • Yield: a moderately productive variety with early onset of production from the 3rd year after planting.
  • Disease resistance: susceptibility to any fungal disease or pest is unknown in our conditions.
  • Frost resistance: to -16 °C
  • Growing in the first years: Young olive trees are usually grown in pots or containers. Old trees are much hardier than young ones. If the roots freeze, the tree will die. For overwintering in a cold house, a temperature of plus 10 degrees is ideal. Light is needed for this. If there is too little light, the olive tree loses its leaves. Water little, do not fertilise, do not let the bales dry out, ventilate the cold frame sufficiently. Strong plants at least 2 to 3 years old should be planted outside. The ideal place for planting is a sunny spot near the south wall. It is protected from northerly winds and increases the chances of the olive trees overwintering. Younger plants can tolerate frosts down to -10 °C, older plants down to -16 °C.
