- A hardy French variety from Provence, where it is the most commonly grown olive variety. It is one of the most important varieties among the hundreds of French varieties. Aglandau is also successfully grown in other areas where it is valued for its early ripening, very good cold resistance and high productivity of high-quality olives. The variety is mainly used for the production of high-quality oil, but also for black edible olives. The taste of the oil is highly appreciated and is considered to be unusually fruity. As a table olive, it is harvested after it turns dark purple to black and is called ‘Beruguette’.
- Maturity: medium. At maturity, it takes the shape of a tree or a bush, depending on how it is cut. It is easy to shape and maintain in a compact form suitable for harvesting. Aglandau is well adapted to different climatic conditions and soil types and is frost and drought resistant.
- Flowering: Aglandau is a cross-pollinated variety and needs another olive tree variety planted nearby to produce a crop.
- Fruit: medium-sized, slightly asymmetrical, ovoid and pointed. The olives weigh between 5 and 7 g. The fruit is green in early autumn and gradually turns dark purple and finally black as it ripens. Ripe olives contain 19-23 % oil. The oil pressed from the Aglandau variety has a fruity and green almond aroma.
- Harvesting season: Green olives are harvested in October, black olives in November and December.
- Yield: a moderately productive variety with an early start of production from the third year after planting.

- Frost resistance: to -16 °C
- Growing in the early years: young olive trees are usually grown in pots or buckets. Old trees are much hardier than young ones. If the roots freeze, the tree will die. For overwintering in a cold house, a temperature of plus 10 degrees is ideal. Light is needed for this. If there is too little light, the olive tree loses its leaves. Water little, do not fertilise, do not let the bales dry out, ventilate the winter quarters sufficiently. Clean up as soon as possible. Don't expose it to the sun right away, get used to it slowly. Strong plants at least 2 to 3 years old should be planted outside. The ideal place for planting is a sunny spot near the south wall. It is protected from northerly winds and increases the chances of the olive trees overwintering. Younger plants can tolerate frosts down to -10 °C, older plants down to -16 °C.
