  • Cailletier is the main variety in the Alpes-Maritimes, where it makes up almost all the olive trees grown.
  • The tree can grow to a height of 8 to 10 metres.
  • This variety is characterised by its uniform size and the uneven ripeness of the olives on the same tree. The differences in colour observed in the orchard are also apparent at the marketing stage.
  • Cailletier is one of the main French varieties for the preparation of black olives. Its characteristic soft fruitiness makes it one of the most popular varieties in this category.
  • It is also used to produce olive paste and oil.
  • In order to obtain the registered designations of origin ‘Huile d'olive de Nice’, ‘Olive de Nice’ and ‘Pâte d'olive de Nice’, 95 % of the olive trees must be of the Cailletier variety (tolerance of 5 % for pollinating varieties). The younger plants can tolerate frosts down to -10 °C, the older ones down to -16 °C.

  • Growing in the early years: young olive trees are usually grown in pots or buckets. Old trees are much hardier than young ones. If the roots freeze, the tree will die. For overwintering in a cold house, a temperature of plus 10 degrees is ideal. Light is needed for this. If there is too little light, the olive tree loses its leaves. Water little, do not fertilise, do not let the bales dry out, ventilate the winter quarters sufficiently. Clean up as soon as possible. Don't expose it to the sun right away, get used to it slowly. Strong plants at least 2 to 3 years old should be planted outside. The ideal place for planting is a sunny spot near the south wall. It is protected from northerly winds and increases the chances of the olive trees overwintering. Younger plants can tolerate frosts down to -10 °C, older plants down to -16 °C.
